Mature cows typically range in height from 34-46 inches,
with a majority in the range of 36-42 inches, measured at the hip.
Average weight of a mature cow is 600 - 700 lbs.
Bulls typically range in mature height from 36-50 inches,
with a majority in the range of 38-44 inches, measured at the hip.
Average weight of mature bull is up to 1,000lbs.
Dexters produce a rich milk, relatively high in butterfat (4%) and the quality of the milk overall is similar to that of Jersey cattle. Dexters can reasonably be expected to produce up to 3 gallons of milk per day. Yields of cream up to one quart per gallon are possible.
The cream can be skimmed for butter or ice cream.
Pound for pound, Dexters are far more economical than their larger counterparts. More Dexters can be grazed on less acreage and they typically produce lean, tender, fine-grained beef with excellent flavor.
They typically reach harvest weight in 18–24 months and result in small cuts of high-quality, lean meat, with little waste.
